Tropical Chicken Slaw

Ingredients:
• 1 Large chicken breast
• 1 Cup grated carrot
• ½ head of green cabbage and ½ red cabbage
• 3 green onions
• 1 Cup pineapple chunks
• 2 tsp honey
• 1 tsp pineapple vinaigrette
• 2 tsp soy sauce
• 1 tbsp sesame seeds
• 2 tsp olive oil
• 4 tsp rice vinegar
• 2 tbsp almonds
• 4 tsp pineapple juice
• 3 tbsp greek yogurt

Instructions:
•Preheat oven to 425, place sesame seeds and almonds on baking sheet. Bake for 5 minutes or until golden. Set aside. Meanwhile cook and shred chicken
•In large bowl toss cabbage, carrots, pineapple chunks, green onions, and chicken.
•For dressing, whisk greek yogurt, rice vinegar, honey, pineapple juice, soy sauce, olive oil in separate bowl.
•Onced mixed pour over cabbage mixture and toss. Finish with adding almonds and sesame seed to the top
